Eggplant Cheese Steak

Introduction

Vegetarian Cheese Steak. Serve with ketchup for an authentic cheese steak flavor. Vegetarian Cheese Steak. Serve with ketchup for an authentic cheese steak flavor.

Ingredients

    Eggplant
    Onions
    Bell Peppers, any color
    Garlic
    White Flour
    Worcestershire Sauce
    Vegetarian Broth
    Provolone Cheese

Directions

Peel and Slice Eggplant into strips. Salt and Sit for 30 minutes in colander. Rinse prior to cooking.
Lightly coat eggplant, bell peppers, onions and garlic with flour.
Warm oil in wok or large saute pan
add onions, bell peppers and garlic. Cook until slightly brown and wilted.
Cook eggplant til lightly brown.
Remove all veggies from wok or saute pan. Clean the pan with whisk and broth. Pour broth on hot pan and deglaze all the tidbits of flavors off pan. When pan is clean add worcestershire sauce and stir well.
Put all veggies back into pan and stir well. Layer cheese slices on top and cover pan for 3 minutes, until cheese is melted.
Serve hot with sourdough bread, ketchup, hot sauce or hot peppers.
