Cheesy Italian Beef & Rice

    I lb ground beef 93% lean
    I cup chopped tomato
    2 cups Minute Ready to Serve Brown rice
    1 cup chopped onion
    1/2 diced green pepper
    2 tsp garlic powder
    2 tsp dried basil
    2 tsp dried oregano
    3 tsp salt
    1 tsp pepper
    6oz can of tomato paste
    1/4 cup water
    1/2 cup Kraft shredded mozzarella part skim


You can adjust the seasonings as you wish. I have even swapped out the garlic powder for chopped garlic instead. I have also added 1 tsp red pepper flakes for an extra kick.

In non stick skillet on medium high heat, brown beef until no longer pink. Add rice, green pepper, and onions, cook until onions are translucent (about 8 to 10 minutues) . Stir in tomato paste, chopped tomato, water, and seasonings. Simmer until water is reduced by half, stirring ocassionally. Sprinkle cheese over top and remove from heat. Place lid over skillet to allow cheese to melt. Serve with a nice green salad to complete the meal.
