Tuna Chunks with Veggies

Number of Servings: 4

Ingredients

    20 oz. raw tuna chunks (thawed)
    1lb Broccoli, florets (frozen is okay)
    1lb Brussel Sprouts (frozen is okay)
    2T garlic powder
    .5C Olive Oil
    Black Pepper & Herbs de Provence to taste

Tips

If you want fully cooked veggies, thaw the greens first. Otherwise it's a crunchy, al dente experience.


Directions

1. Layer brussel sprouts & broccoli in a large (or 2 medium) Pyrex trays.
2. Sprinkle garlic powder
3. Add tuna chunks in ~2" squares
4. Drizzle oil over the top
5. Add black pepper, herbs de provence to taste
6. Cover tightly with foil and bake for 45 minutes

Serving Size: 4 hearty lunches
