Introduction

This recipe is so simple and can be modified to suit the ingredients you have on hand. I always prefer to keep my baking natural and nutrient-rich rather than artificially low calorie. Number of Servings: 12

Ingredients

    1 1/2 cup Whole Meal Flour
    1/2 cup Flaxseed, ground
    1 1/2 tsp Baking Powder
    1/4 tsp Baking Soda
    3/4 cup regular Oats
    2 Tblsp Cinnamon, ground
    1/2 cup chopped Walnuts, optional
    1 cup mashed Banana - about 2 large
    1 cup Non-fat Yoghurt - any flavour
    1/2 cup unsweetened Applesauce
    1 tsp Vanilla extract
    2 lg Eggs, lightly beaten
    1 cup frozen Blueberries, fresh, thawed or frozen will work




Tips

The sweetness from the apple sauce, yoghurt and bananas omit any need for additional sugar.


Directions

Preheat oven to 175C or 350F
Grease a bread loaf (8"x4")
Combine all dry ingredients into a large mixing bowl
(first 7 ingredients).
In a smaller bowl combine all wet ingredients ( all remaining) and add to dry ingredients. Stir until just moist.
Spoon or pour batter into greased loaf pan and bake for 50-60 mins or until a toothpick comes out clean.
Cool 15 minutes on a wire rack then remove from pan and continue to cool completely on wire rack.
Slice loaf into 12 slices.

Serving Size: 1 loaf, sliced into 12 servings
