A delicious, clean & light bean dip that pairs wonderfully with veggies or crackers. Uses White Beans but it comes out this beautiful green color thanks to the fresh parsley. Ingredients

2 cans White Beans (drained & rinsed)
Juice from 2 medium lemons
1/2 red onion, chopped
1 bunch fresh parsley (approx. just grab a good handful & rip off)
Kosher Salt (to taste)
Black Pepper (to taste)
EVOO (to taste & for consistency)
Tips
Directions
Put beans, lemon juice, red onion & parsley in food processor.
Mix on medium and drizzle in EVOO until you have desired consistency.
Taste & adjust Salt & Pepper to your liking.
Enjoy with fresh veggies or crackers! (we like most any flavor of Triscuits or Low Fat Wheat Thins)
