Ingredients

Onions, raw, 1 large
Okra, 2 cup slices
Celery, raw, 3 stalk, medium (7-1/2" - 8" long)
Olive Oil, 1 tbsp
Parsley, dried, 1 tbsp
Thyme, fresh, .5 tsp
Basil, .25 tbsp
Bay Leaf, 1 tbsp, crumbled
Garlic, 4 clove
Water, tap, 4 cup (8 fl oz)
*Brown Rice, long grain, 2 cup
Zucchini, 1 cup, sliced
Red Ripe Tomatoes, 2 large whole (3" dia)
Chicken Drumstick, 3 drumstick, bone and skin removed

Directions
For gumbo, heat oil in large Dutch oven or kettle. Add okra, onion, and celery. Cook and stir until okra is crisp-tender. Add garlic, parsley, bay leaf, thyme, and basil, tomatoes, and deboned and cooked chicken meat.
Simmer 1 1/2 hours, stirring occasionally. Add a dash of salt, pepper, cayenne and a dash of hot pepper sauce (optional). Add water as needed based on how thin you want the soup. Remove bay leaf before serving.
Cook rice while soup is simmering. Add to soup just before serving. Stir well and serve.
