Round Steak with Tomatoes

Introduction

Number of Servings: 4

Ingredients

    1 lb. beef eye of round
    1 c. onion
    1/2 t. garlic powder
    1.5 c. diced canned tomatoes
    1/5 t. salt
    1 c. beef stock
    1 T. olive oil
    1c. diced celery

Tips

If you wish to add rice to this, after 30 min of cook time, remove beef from skillet, add an additional cup of liquid (stock, water, or tomato juice) stir in 1 c. rice, bring to a boil then reduce to simmer, return beef to the pot on top of the rice, replace lid and continue cooking for additional 30 min.


Directions

1. Tenderize (pound) beef and cut into 4 portions, and
season with salt and garlic powder.
2. Heat oil in large skillet over medium heat, and brown
beef
3. Cover steak with tomatoes, celery and onions. Add
stock.
4. Place tight lid on skillet, reduce heat to simmer and
cook for 60 min till beef is tender.

Serving Size: makes 4 servings 4 oz. beef plus 1/2c. tomatoes and onions
