1 lb. beef eye of round
1 c. onion
1/2 t. garlic powder
1.5 c. diced canned tomatoes
1/5 t. salt
1 c. beef stock
1 T. olive oil
1c. diced celery
If you wish to add rice to this, after 30 min of cook time, remove beef from skillet, add an additional cup of liquid (stock, water, or tomato juice) stir in 1 c. rice, bring to a boil then reduce to simmer, return beef to the pot on top of the rice, replace lid and continue cooking for additional 30 min.
season with salt and garlic powder.
