Easy Banana Bread Pancakes

Introduction

Delicious 'pancakes' that are full of energy, taste like banana bread and are incredibly moist. YUM! Delicious 'pancakes' that are full of energy, taste like banana bread and are incredibly moist. YUM!
Number of Servings: 1

Ingredients

    2 small ripe bananas
    2 large eggs
    1 tsp ground cinnamon
    small pinch salt
    some light cooking spray for your pan

Tips

Make sure to stir up the batter before pouring new pancakes
Pancakes will need a bit of time to set before flipping, so be patient. Even though these can be cooked on a higher heat, for best results cook on lower heat and leave about 2 minutes before flipping


Directions

Mash up the bananas with a fork
Add cinnamon and salt, combine
Crack in both eggs and mix well
Heat up a pan to medium low heat, spray with oil
Pour batter onto pan so it spreads to 2-2.5 inches in diameter
Flip when batter has set well, cook through.
Continue to pour and cook batter until finished

Serving Size: makes around 7 or so 2.5 inch pancakes- enough for 1 for a hearty breakfast
