Tex-Mex Egg Rolls

Introduction

Trying to make a healthy appetizer with what I had in my fridge and pantry so here it is. Trying to make a healthy appetizer with what I had in my fridge and pantry so here it is.
Number of Servings: 12

Ingredients

    1 cup Broccoli slaw
    5 Portabella mushrooms
    1 cup corn
    1 cup black beans drained
    3 Chicken breast no skin or fat
    1 cup low fat cheese
    16 corn tortillas
    1 tbsp Butter
    Season with your choice of seasoning I used roasted garlic and herb from grill mates.

Tips

Serve with FF sour cream and guacamole


Directions

Cook all ingredients except corn tortilla and cheese. Place 1 tbsp onto corn tortilla add cheese roll up place on cookie sheet. Spray with cooking spray and place in preheated oven at 400 degrees cook about 8-10 minutes or until golden brown and crisp.

Serving Size: 2 tortilla is one serving
