450 grams Calamari
1 lg onion
2tbs olive oil
1 can tomato paste
2 bay leaves
3 cloves garlic
Clean and dry the calamari (I use frozen). Heat the olive oil and cook them for a couple of minutes.
Add the tomatoes, the onion, garlic, the bay leaves, the tomato paste and salt and pepper.
You can add a bit of water if it seems too thick. Let it boil then reduce heat and simmer for 20 minutes.
Can be served with rice or pasta (but then not low-carb!)
Serving Size: Makes 4 servings, 2 if really hungry!
