Introduction

I made this recipe to use up the last of a bumper crop of summer tomatoes. You can substitute canned tomatoes. Makes about 24 one cup servings. This recipe freezes well. Ingredients

    50 medium fresh summer tomatoes (such as beefsteak or bigboy), seeds removed and processed in a food processor until desired consistency
    1 celery stalk, chopped for food processor
    2 carrots, chopped for food processor
    10 cloves garlic, chopped for food processor
    1 small onion, chopped for food processor
    1 small red bell pepper, chopped for food processor
    1 small yellow bell pepper, chopped for food processor
    1 medium green bell pepper, chopped for food processor
    1/3 cup sugar
    1 Tbsp fresh oregano or 2 tsp. dried
    2 springs thyme
    1 Tbsp koser salt
    1 tsp black pepper
    1 Tbsp dried basil
    1/2 tsp red chili flakes
    1 bay leaf
    1 cup red wine
    12 oz can tomato paste

Directions

Process tomatoes and place in a large saucepan.

Combine celery, carrots, garlic, onin and bell peppers in food processor and process until desired consistency. Place in saucepan with tomatoes.

Add remaining ingredients to saucepan and simmer for 3-4 hours, or until thickened and reduced by approximately 1/4.
