eggplant, one large or two small
1 tsp olive oil
1 cup diced onion
1/2 cup diced red pepper
1/2 cup diced celery
Spray a pan with nonstick spray. Saute onion, pepper and celery until onion is transparent and celery is tender. Add eggplant and cook until eggplant is heated through. Season with salt and pepper to taste.
Serving Size: makes 6 1/2 cup servings
