Ingredients

    1 1/4 Cup Lentils
    4 strips Bacon
    1.5 Onions, finely chopped
    2 Carrots, Chopped
    2 Stalks Celery, Chopped
    5 Cups Water
    1 Bay Leaf
    3 sprigs Parsley
    1/2 tsp Thyme
    1 tsp salt
    freshly ground black pepper
    1 tsp tomato paste

Directions

Wash Lentils several times in cold water, then soak in cold water for 2 hours. Drain.

Fry Bacon until crisp, drain on paper towel and discard all but 2 Tbsp of bacon fat.

Fry onions, carrots, and celery in bacon fat for 5 minutes.

Transfer veggies to a sauce pan and add lentils, water, bacon, bay leaf, parsley, thyme, salt, pepper and tomato paste.

Cover and simmer over low heat for 1 1/2 hours or until done.
