Introduction

This is a recipe that was in a cookbook that we brought back from Egypt in 1973 when we went to Egypt on my father's sebatical. He was a professor of Arabic for 20 years at the University of Kentucky. I can't explain it, he was born in Mass. and went to school at Harvard. Go figure. Ingredients

    1 Can chick peas
    4 tbls. tahini
    1/2 cup lemon juice
    1/2 tbl. salt
    2 cloves garlic crushed (2 tbls. crushed from a jar)
    2 tbls. chopped parsley
    1/4 cup olive oil

Tips

Reserve a few chick peas for garnish.


Directions

Blend chick peas in blender. Mix in tahini, lemon juice, garlic, and salt. Mix well. Add a little cold water to give a white color to tahini. (A tablespoon or two). Beat until smooth with creamy consistancy. Correct seasoning. Put in bowl. Garnish with chopped parsley and a few whole chick peasl
