Primal Chicken Soup w/Wild Rice & Quinoa

Introduction

This chicken soup is made with homemade chicken broth that has not been defatted. It is super filling and super delicious! This chicken soup is made with homemade chicken broth that has not been defatted. It is super filling and super delicious!
Number of Servings: 6

Ingredients

    1/2 onion, chopped
    3 medium stalks of celery, chopped
    3 medium carrots, chopped
    2 cooked chicken thighs, bone & skin removed
    1/2 C uncooked quinoa
    1/2 C uncooked wild rice
    2 C homemade, full fat chicken broth
    4 C water
    1/2 t black pepper
    1/4 t chili powder
    2 T poultry seasoning
    salt (to taste) : not included in calculations

Directions

1. Saute onions, celery, carrots in a couple teaspoons of your chicken broth to prevent sticking.
2. Add chopped chicken and spices. Let cook 2 or 3 minutes.
3. Add broth, water and bring to a gentle boil.
4. Add quinoa and wild rice and cover the pot.
5. Maintain a gentle boil for 20 minutes.

Serving Size: Makes 6 servings of approx. 1 & 1/4 C each
