White Chicken Chili

Number of Servings: 10

Ingredients

    1 medium onion, finely chopped (about .5 cup)
    3 tablespoons olive oil
    1 (4 ounce) can chopped green chiles, drained
    6 tablespoons flour
    2 teaspoons ground cumin
    4 cans (15 ounce) Great Northern Beans
    2 can (14.5 ounce) chicken broth
    4 finely chopped cooked chicken breasts

Directions

In large skillet, cook onion inoil for 4 minutes or until transparent. Add chiles, flour and cumin; cook and stir for 2 more minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot. Garnish with shredded co-jack cheese, sour cream and/or salsa (not included in calculations).
