2 large eggs, beaten 3/4 cup old fashioned oats 2 tsp Worcestershire sauce 1/2 C Nonfat milk 1/4 C ketchup 1 medium onion, peeled 1/2 tsp salt Freshly Groud black pepper to taste 1/2 diced red or green bell pepper 8 oz can no salt tomato sauce
Great the next day in a sandwich too.
Put the oats and milk in a small bowl, mix to allow milk to be absorbed into oats (at least 3 minutes). Thinly slice 1/4 of the onion into rings, set aside. Dice the remaining onion. In a large bowl, add all ingredients except tomato sauce and onoin rings together and mix until just blended. Transfer mixture to a 9x13 baking dish and shpae into a rectangular loaf about 5 inches wide and 2 inches high. Pour tomato sauce over meatloaf and sprinkle with onion rings. Bake until an instant read meat thermometer inserted in the thickest part says 160 degrees, about one hour. Remove from oven, let rest 10-15 minutes before serving.
