Introduction

Ingredients

    1.4 lbs (22 oz.) 96% lean ground beef
    1 med. onion, diced finely
    1 med. carrot, diced finely
    2 stalks celery, diced finely
    1/2 red pepper, diced
    1/2 to 1 ripe tomato, diced
    3 cloves of garlic, minced or smashed
    1 T. coconut oil
    1/3 c. ketchup
    1/4 c. barbecue sauce
    2 T. chili sauce
    1 T. worcestershire sauce
    1 1/2 T. red wine vinegar
    1 T. dijon mustard
    1 t. sugar
    1 T. tomato paste

Tips

3 oz. may sound like a small serving, but it fills a hot dog bun really well. I had one, my husband had two and it was plenty.


Directions

In large pot or dutch oven, heat coconut oil. When hot, add onions, carrots, and celery and stir. After a couple of minutes, add garlic and stir again. Then add meat, breaking up clumps as it cooks. Keep stirring and breaking up clumps (you don't want big chunks) as meat cooks. When no pink remains, add tomatoes, peppers and all remaining ingredients. Allow to simmer. If mixture starts to become too dry, add some water or chicken broth.

Before serving, taste and adjust seasonings to suit yourself. You may want more vinegar or more sweetness.

Serve in warmed, toasted hot dog buns (it's less messy!) along with a salad or other green vegetable.
