Low Carb - High Protein Granola

Ingredients

    1.5 cup raw chopped nuts (pecans & walnuts)
    1.5 cup shredded coconut
    .25 cup pumpkin seeds
    .25 cup flax seeds
    .50 cup wheat bran
    .25 cup water
    .25 cup coconut oil
    .25 cup organic raw honey

Directions

1. Heat oven to 300 F. Cover baking sheet with wax paper.

2. Melt the coconut oil and honey - you can microwave it in the bowl you're going to use for mixing.

3. Add in the nuts, coconut, seeds, water and wheat bran. Combine it all in a bowl and turn out onto the baking sheet. Press into an even layer.

4. Bake for 30-40 minutes. Twice during the baking, stir the mixture with a large spoon and press back down. After the second time, don't move it around any more. Bake until fragrant and lightly browned on the surface.

5. Let cool completely on baking sheet. It will crisp as it cools. Store in sealed container.

Serve with yogurt, cottage cheese, etc
