Vegan Spelt Pancakes




Number of Servings: 2

Ingredients

    1/2 tbsp. ground flax seed
    1 1/2 tbsp. water
    1 cup spelt flour
    1/2 tbsp. baking powder
    1/8 tsp. kosher salt
    1 tbsp. sugar (I use turbinado, but granulated would work just as well)
    1 cup almond milk

Directions

In a small bowl, combine flax seed and water; let sit 3 minutes.
In a medium bowl, mix flour, baking powder, sugar, and salt.
Mix almond milk into flax seed mixture and stir well.
Pour wet ingredients into dry and whisk until smooth.
Use 1/3 cup of batter per pancake.

Serving Size: makes 4 large pancakes
