Chocolate Chip Punpkin Muffins

Introduction

A great Fall recipe which is tasty and easy on the waistline and extremely quick and easy! A great Fall recipe which is tasty and easy on the waistline and extremely quick and easy!
Number of Servings: 18

Ingredients

    1 c. sugar
    1 c. flour
    1 tsp. baking powder
    1/4 tsp. baking soda
    1/4 tsp. salt
    1 tsp. cinnamon
    2 eggs, beaten
    1 c. ground pumpkin, canned
    1/2 c. canola oil
    1 c. semi-sweet chocolate morsels

Tips

To make a heartier muffin, you can add 2/3c dry instant oatmeal. As well, you can half sugar between white and brown and add 1 tsp vanilla. Making those variations will adjust nutritional values.


Directions

Preheat oven to 350 degrees. Mix all ingredients. Bake for 20-25 minutes or until toothpick inserted in center comes out clean. Enjoy!
