Ingredients

Chop:
2.5 cups yellow squash
1 small onion
1 small red pepper
1 medium tomato
Beat together:
5 medium eggs
1/4 cup water
salt
pepper
hot sauce
Add:
1/2 cup cooked brown rice
1/4 cup Parmesan cheese
1 tsp oregano
12 torn fresh basil leaves
Place in fry pan and heat on medium:
1 tsp olive oil

Directions
Chop vegetables and saute in 1 tsp olive oil in large fry pan over medium heat until tender crisp. Cool
Beat 5 medium eggs, 1/4 cup water, salt, pepper and hot sauce together.
Add brown rice, Parmesan cheese, oregano and fresh torn basil leaves.
Heat olive oil in large non stick fry pan over medium heat and add egg mixture. Cook on stove top for 5 minutes.
Place in 425 degree oven for 15 minutes until or until set.
Serving Size: makes 4 generous servings
