Morticia's Crock Pot Vegetable Beef Barley Soup

Introduction

This hearty thick soup is my family's favorite and they ask for it year round. This hearty thick soup is my family's favorite and they ask for it year round.

Ingredients



    12 oz raw lean beef stew meat
    1 cup finely chopped yellow onion
    1/2 cup finely chopped celery
    1/2 cup canned cooked diced carrots
    15 ounce can no salt added mixed vegetables
    300 grams diced potatoes
    3/4 cup quick barley
    2 cups unsalted chicken broth
    1/2 cup no salt added tomato sauce
    3 cups water
    1 crushed large garlic clove
    1 bay leaf
    1/2 tsp season salt
    1/2 tsp onion powder
    1/2 tsp black pepper
    1/2 tsp dried basil

Directions

Cut the beef into uniform small pieces and brown. Add chopped celery and onion. Cover and let the veggies wilt. Add garlic, spices, broth, water, tomato sauce, undrained carrots, undrained mixed veggies, and bring to a boil. Transfer to crock pot if you do not have one that you can use on the range. Put on low. Add barley and potatoes and cook until they are done. The time will depend on your crock pot but mine usually is done in 2 to 3 hours.
