Roasted Tomato Soup

Ingredients

    2 pounds Roma tomatoes
    3 tsbp olive oil
    4 cloves garlic
    4 cups chicken broth
    1/4 cup chopped fresh basil
    1/2 tbsp balsamic vinegar
    salt to taste
    ground black pepper to taste

Directions

Cut tomatoes in half. Place cut side up on a baking try. Add garlic cloves. Drizzle everything with olive oil and sprinkle with salt and pepper. Roast at 375 degrees for one hour. Snip the ends off the garlic and squeeze into food processor. Add tomatoes, broth basil and vinegar. Blend and enjoy!
