Ingredients

    2 Large Eggplants
    1/2 Cup Tahini
    2/3 Cup Lemon Juice
    1 1/4 Tsp. Salt
    1 Tbls. Chopped Parsley
    2 Cloves Garlic- Crushed


Tips

Serve with warm Pita bread or fresh vegetables.


Directions

Make slits in eggplant to allow steam to escape. Bake or broil until skin become crisp and becomes crisp and begins to crack. Scoop pulp and mash thoroughly. Blend in lemon juice, tahini, garlic and salt and continue beating. Stir in a little water if to thick. More lemon juice or salt may be added if needed. If served as side dish to meat or fish use shallow platter topped with olive oil. Garnish with chopped parsley, radishes and green onions.
