Introduction

This is a recipe I got from my Mom's old Better Homes and Gardens cookbook, circa 1981. I just made some substitutions to make it healthier. This is a recipe I got from my Mom's old Better Homes and Gardens cookbook, circa 1981. I just made some substitutions to make it healthier.
Number of Servings: 16

Ingredients

    3 T margarine
    3 T unsweetened applesauce
    1/4 C sugar
    1/2 C all purpose flour
    1/2 C whole wheat flour
    2 eggs
    3/4 C sugar
    1 T all purpose flour
    1 T whole wheat flour
    1/4 t lemon peel zest
    3 T lemon juice
    1/4 t baking powder

Directions

Preheat oven to 350.
Grease an 8x8x2 baking pan.
Beat butter and apple sauce for 30 seconds, ass the 1/4 cup sugar and 1/4 teaspoon salt, beating till fluffy.
Stir in the half cups of flours.
Pat dough into bottom of pan.
Bake in a 350 over for 15 minutes.
Meanwhile, beat eggs, add remaining sugar, flours, lemon peel, lemon juice, and baking powder.
Beat 3 minutes or till slightly thickened.
Pour over baked layer.
Bake and additional 25 to 30 minutes longer or till light golden brown around edges and center is set. Cool. Sift powdered sugar over top, if desired (not in nutrition info).
Cut into squares. Makes 16.
