Ingredients

1 Tbsp Olive Oil
1/2 c Onion, chopped
2 Garlic Cloves, minced
1 1/2c Zucchini, chopped
1 c Red Bell Pepper, chopped
1 c Green Bell Pepper, chopped
4 c Tomatoes, chopped
1 Tbsp Chili Powder
1 tsp Old Bay Seasoning
1/4 tsp Black Pepper
1 (12oz) V8 Spicy-Hot Tomato Juice
1 (15oz) can Low-Sodium Red Kidney Beans
1 Jalapeno Pepper, Minced
Tips
Directions
Heat olive oil in a dutch oven over med-hi heat; add onion & garlic. Cook 2 min or until tender, stirring constantly. Add zucchini & bell peppers; cook 5 min, stirring frequently. Add tomatoes & remaining ingredients, stirring well to combined. Cover, reduce heat & simmer 20 min., stirring occasionally.
