Salsa pumpkin soup

Number of Servings: 6

Ingredients

    4 cups broth ( chicken or veg- low sodium)

    one 15 oz can beans ( I cook my own beans, use black or pinto)

    1 cup (canned or frozen) sweet corn kernels

    3/4 cup salsa

    1 tablespoon minced garlic

    1 teaspoon chili powder

    1/2 teaspoon ground cumin

Tips

optional toppings cheese, sour cream, and or scallions

Directions

Spray a medium pot with nonstick spray and bring to medium heat on the stove, place garlic in the pot. Stir and cook for 1 minute. Add broth and spices, and bring to a simmer.
Add pumpkin and mix well. Add the remaining ingredients, stir, and bring soup to a boil. Reduce heat to low and simmer 10 minutes.
