Lentil Potato Salad

Introduction

A light, protein- and vitamin-packed potato salad. A light, protein- and vitamin-packed potato salad.
Number of Servings: 8

Ingredients

    4 small potatoes (about 3.5 cups diced)
    1.5 cups dried lentils
    2 ribs celery chopped
    1 large carrot chopped
    3 scallions (about 1/4 cup chopped)

    Dressing:
    1/4 cup vinegar
    1/4 cup olive oil
    1 Tbsp fresh rosemary (less if substituting dry)
    2 Tbsp fresh basil (less if substituting dry)
    2 cloves garlic

Tips

Use smaller portions as a side or a full portion for the central part of a light meal.


Directions

Boil, peel, and dice potatoes while lentils are cooking (cover with water, bring to boil, reduce to simmer and cook for about 20 minutes). Combine potatoes, lentils and veggies. Combine dressing ingredients and mix in a blender (while drizzling in olive oil). Stir dressing over salad and let it sit at least an hour in the refrigerator before serving.
