Chipotle Tilapia Dinner

Introduction

A spicey low-calorie dinner for 1! A spicey low-calorie dinner for 1!
Number of Servings: 1

Ingredients

    -Schooner Tilapia, 4 oz uncooked
    -Kraft Minute Whole Grain Brown Rice, 0.5 cup
    -Trader Joe's Shelled Edamame Soybeans, 0.5 cup
    -Mrs. Dash Southwestern Chipotle seasoning, to taste.
    -I Can't Believe It's Not Butter, Original Buttery Spray, 5 sprays

Directions

1. Preheat oven (I use my toaster oven) to a broil.
2. Spray a baking pan with nonstick cooking spray and place Tilapia in the center of the pan.
3. Season tilapia with the Mrs. Dash. Use as much or as little as you'd like. Fully coat the fish for a nice kick!
4. Place tilapia in preheated oven for approximately 10-15 minutes.
5. While tilapia is cooking, cook rice according to package directions (if using instant rice, it only takes about 10 minutes, so it will be finished about the same time as the fish!).
6. Simultaneously, boil the edamame (again, shouldn't take more than about 7 minutes, so time it to coincide with the rice and fish). When done, drain of any excess water.
7. Combine edamame and rice. Spray with the butter and season with Mrs. Dash to desired taste.
8. Serve with the fish and enjoy!
