Slow Cooker Chicken & White Bean Stew

This is a lightened version of my favorite pork stew. I switched to chicken and chicken sausage (instead of pork shoulder and kielbasa) to reduce the fat & calories. The orig had 430 calories and 20 grams of fat. This version has 243calories and just 4.5 grams of fat. Cholesterol is down from 95mg to 25mg. Sodium is halved from 1063mg to 502 mg. Ingredients

1 1/2 pounds boneless skinless chicken breast, cut in 1 inch cubes
12 ounces (4 links) Al Fresco Chicken Sausage, Sundried Tomato flavor, cut in 1/2 inch slices
1 1/2 cups onion, chopped
2 15 oz cans cannellini beans, drained & rinsed
6 carrots, peeled & sliced to 1 inch chunks
1 3/4 cups reduced sodium chicken broth
1/4 cup tomato paste
1 tsp dried thyme
1/2 tsp ground black pepper
1 cup cherry tomatoes, halved
Tips
Directions
Combine everything but the tomatoes in your slow cooker. Cook on low 8-10 hours, or on high 4-5 hours.
Stir in tomatoes and cook 10 minutes longer.
