Chop 1 large cauliflower
Chop 1 medium onion
Saute in large fry pan until soft and starting to brown.
Beat 6 large eggs
1 cuo soy milk
Salt & pepper to taste
1 tsp oregano
Add cooled cauliflower mixture, 1/4 cup Parmesan cheese
and 3/4 cup cooked brown rice. Mix well.
Return to large fry pan sprayed with Pam.
Cook over medium heat until browned on bottom.
Bake in 425 degree oven until top starts to brown and mixture is set.
Cool slightly before serving.
Remove from heat and cool.
Beat eggs, salt, pepper and oregano.
Add rice, soy milk cauliflower/onion mixture and Parmesan cheese.
Cook in large fry pan sprayed with Pam until bottom just starts to brown.
Transfer to a 425 degree oven and cook until top starts to brown and mixture is set.
