Feta Burgers--7 net carbs per burger

Ingredients

    1/2 cup cucumbers (unpeeled), coarsely grated
    1/2 clove garlic, crushed to a paste
    1 teaspoon fresh lemon juice
    1 lb lean ground beef
    4 oz zucchini, finely diced (about 1 cup)
    1/2 cup crumbled feta
    1/3 cup finely diced red onion
    1/2 teaspoons dried marjoram
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    Vegetable oil cooking spray
    1 jar (7 oz) roasted red peppers, drained
    1cup Special High Fat, low carb Veggie Dip
    4 tsp kroger fiber powder

Tips

The special dip in the recipe is something else I posted look for "Special high fat, low carb veggie dip" Oh and if you don't have that specific Lipton packet you can substitute it for any you have.


Directions

1. In a bowl, combine cucumbers, garlic and juice; set aside.

2. In another bowl, mix beef, zucchini, feta, onion, marjoram, fiber powder, salt and pepper.

3. Form beef mixture into four 3/4-inch-thick patties. Coat a grill pan or grill rack with cooking spray. Grill patties over medium-high heat, flipping once, about 5 minutes each side, until internal temperature reaches 160.

4. Divide roasted peppers evenly among burgers (place on bottom of plate or if you have a low carb bun use that.; top with 1 burger, special dip (1/4 cup each), cucumbers and lettuce.

Serving Size: makes 4 burgers
