Beef and Black Bean Soup

Introduction

A hearty soup great for cold winter days! Cook on stove or throw in the slow cooker. You can use any canned or fresh veggies, I just used what was on hand. Hope you like it! Ingredients

    Beef Chuck Roast with fat trimmed and cubed
    2 tbsps olive oil
    1/2 medium onion, diced
    4 cloves garlic, minced
    1 lge rib celery, sliced
    1 packet Knorr Concentrated Beef Stock
    1 cup water
    1 32 oz container Swanson Beef Broth Fat Free, 50% Sodium
    2 medium carrots, sliced
    3/4 cup Libbys Naturals canned Sweet Corn
    3/4 cup Libbys Naturals canned cut Green Beans
    3/4 cup canned Sweet Peas
    1 can Buschs Black Beans, rinsed
    2/3 cup Quaker Quick Barley

Tips

You can also brown the meat then put everything in slow cooker on low for about 4 hours.


Directions

In stock pot brown beef in olive oil. Remove when brown. In same oil cook onions, garlic and celery until onion is translusant. Add water, heat til bubbling, add Knorr beef stock. Stir until dissolved. Put beef back in and stir. Add Swanson beef broth, carrots, corn, green beans, sweet peas and black beans. Bring to just boiling. Simmer for about 1 1/2 hours. 15 minutes before ready to eat add Quaker quick barley.

Serving Size: Makes 15 servings (1 cup per serving)
