Spiced Vegetable Saute

Ingredients

    2 medium carrots (quartered, and sliced)
    2 medium parsnips (quartered, and sliced)
    2 large pieces of celery (sliced)
    3/4 cup vegetable broth
    2 tbsp Extra Virgin Olive Oil
    2 tsp fresh ground ginger
    1/2 tsp fresh ground cinnamon
    1/4 tsp ground nutmeg
    1/4 tsp ground cloves
    Dash of salt and fresh ground black pepper to taste
    2 tbsp chopped fresh parsley

Directions

Makes 6 servings

Place the carrots, parsnips and celery in a pot and cover with cold water. Gently boil the vegetables until tender but still firm. Drain the vegetables while retaining the stock, add 3/4 cup of the stock to the pot, and then set the pot back on the stove top over medium heat. Add the remaining ingredients, except the parsley, and cook until the stock is almost completely evaported. Spoon into a serving dish, sprinkle with fresh parsley and serve.
