Greek-Inspired Quinoa Salad

Ingredients

1 cup quinoa
2 cups water
1 tablespoon extra virgin olive oil
2 tomatoes, diced
10-12 kalamata olives, diced
4-5 sprigs fresh oregano, chopped
1 handful fresh flat-leaf parsley, chopped
10 fresh basil leaves, rolled into a log and sliced
Reduced Fat Feta Cheese, 3 oz
Salt and Pepper
Tips
Can be served warm or cold.
Directions
1. Boil water. Add quinoa and stir. When it returns to a boil, cover and let simmer on low heat until cooked— about 15 minutes.
2. While the quinoa is cooking, make sure the tomatoes, olives, oregano, parsley, and basil are prepped, cut, and ready to go. Combine the first four ingredients, but leave the basil out to the side.
3. When the quinoa is cooked, add the oil, tomatoes, and herbs (except the basil!). Stir to combine, and season with salt and pepper as needed.
4. Top with basil and Feta Cheese
