    1/4 cup granulated splenda
    1 teaspoon baking soda
    1 teaspoon baking powder
    1-1/4 cups whole wheat flour
    1/4 cup teff flour
    1/2 cup unprocessed wheat bran
    1 tablespoon ground cinnamon
    1 teaspoon ground ginger powder
    1/2 cup unsweetened apple sauce
    1/2 cup chocolate soy milk slender
    3 large egg whites
    1 cup mashed banana (about 2 medium)
    1 teaspoon vanilla extract
    1 tablespoon Molasses
    1 cup hot water
    1/4cup raisins, unpacked
    2 grated carrots


Makes 18 muffins 68 calories each

Preheat oven to 350
Measure splenda, baking soda, baking powder, flour, wheat bran,cinnamon,ginger and splenda into a large bowl. Stir well to combine. Add milk, egg whites, mashed bananas,apple sauce ,molasses . vanilla and water until flour is just moistened. Fold in Raisins and carrots
Use a non-stick muffin pan sprayed with canola oil spray. Bake @ 350 16 minutes until golden brown. and toothpick comes out clean Remove immediately from pan to cool.

    I wondered what teff flour was as well, so I looked it up online, it is a substitute for wheat flour that is derived from an Ethiopian grain and does not contain gluten. I am going to give this recipe a shot and will give a review when I have! - 6/30/09

  • Didn't have everything the recipe called for so I did some substitutions. Might try again with all the proper ingredients - like chocolate soy milk. I'd also add nut next time. - 2/9/08
