Ingredients

1/4 cup granulated splenda
1 teaspoon baking soda
1 teaspoon baking powder
1-1/4 cups whole wheat flour
1/4 cup teff flour
1/2 cup unprocessed wheat bran
1 tablespoon ground cinnamon
1 teaspoon ground ginger powder
1/2 cup unsweetened apple sauce
1/2 cup chocolate soy milk slender
3 large egg whites
1 cup mashed banana (about 2 medium)
1 teaspoon vanilla extract
1 tablespoon Molasses
1 cup hot water
1/4cup raisins, unpacked
2 grated carrots
Directions
Makes 18 muffins 68 calories each
Preheat oven to 350
Measure splenda, baking soda, baking powder, flour, wheat bran,cinnamon,ginger and splenda into a large bowl. Stir well to combine. Add milk, egg whites, mashed bananas,apple sauce ,molasses . vanilla and water until flour is just moistened. Fold in Raisins and carrots
Use a non-stick muffin pan sprayed with canola oil spray. Bake @ 350 16 minutes until golden brown. and toothpick comes out clean Remove immediately from pan to cool.
