Introduction

A bed of tender mushrooms is laden with the winning combination of chicken, mozzarella and more mushrooms, proving you just cannot have too much of a good thing. Number of Servings: 7

Ingredients

    3 cups sliced mushrooms
    14 ounces boneless chicken
    2 eggs, beaten
    1 cup seasoned bread crumbs
    2 tbsp butter
    6 ounces mozzarella cheese
    1 cup chicken broth
    1 can cream of chicken soup

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Place half of the mushrooms in a 9x13 inch pan. Dip chicken into beaten eggs, then roll in bread crumbs.

3. In skillet, melt butter over medium heat. Brown both sides of chicken in skillet. Place chicken on top of mushrooms, arrange remaining mushrooms on chicken, and top with mozzarella cheese. Mix cream of chicken soup and chicken broth together and pour over chicken.

4. Bake in preheated oven for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.
