Introduction

I have altered the orig. recipe to make it healthier.I actually use even less oil, substituting it with yogurt/apple sauce. You can add chopped nuts if desired. Number of Servings: 12

Ingredients

    1 cup all purpose flour
    1/2 cup oatmeal
    3/4 cup granulated sugar
    1 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp baking soda
    2 large eggs
    1/4 cup canola oil
    1/4 cup plain yogurt
    1/4 cup unsweetened apple sauce
    1 c. coarsely shredded carrots
    1 c. coarsely shredded zucchini
    1/2 cup raisins

Directions

Preheat oven to 350 degrees. In large bowl, combine flour, oatmeal, sugar, baking powder, cinnamon, baking soda. In small bowl, beat together oil, yogurt, apple sauce, eggs and vanilla. Stir oil mixture into flour mixture just until mixed. Fold in carrots, zucchini and raisins. Spoon into cups. Bake for 20-25 minutes. Cool on rack. Frost with cream cheese icing if desired but they're delicious as they are!
