salsa chicken & rice

Ingredients

    1 1/2 boneless skinless chicken breast cooked and cubed or shredded
    1 can Rotel tomatoes and green chilies
    1 pt. container fresh salsa (in deli case)
    5c. brown rice( cooked in chicken broth optional-adds flavor)
    1- 2 Tbsp taco seasoning mix
    Cilantro if desired

Directions

Heat canned tomatoes and salsa in a large skillet to boiling, add water to thin if needed. Add taco seasoning mix, chicken and rice, heat to simmering. If there is alot of liquid let it simmer until it is to your liking. Top with chopped cilantro if desired
This makes great use of leftover chicken / rice.
