Deb's Mexican Omelet

Introduction

Spicy Mexican Omelet, Spicy Mexican Omelet,
Number of Servings: 1

Ingredients

    1 Diced Tomato
    1 TBS Diced Onion
    1 Diced Jalapeno pepper
    2 Lrg. eggs (beaten)
    2 oz. diced lean turkey ham
    canola or olive oil spray



Tips

If desired, sprinkle cooked egg mixture with low fat shredded cheese


Directions

Spray skillet with oil and pre-heat, meanwhile mix all ingredients together, when skillet is hot pour egg mixture into skillet, reduce heat and cover. Let cook until egg is cooked all the way through, then fold in half and remove from skillet.
