She's A Chicken

Introduction

Chicken, Rice & Salsa Chicken, Rice & Salsa
Number of Servings: 4

Ingredients

    2 chicken breasts, boneless, skinless (raw), cut in half
    1 cup rice
    2 cups chicken broth (or one 15-oz can)
    2 cups salsa (or one jar)
    1 cup low-fat shredded cheddar

Tips

Easy, quick, and really tasty. Use medium or hot salsa for an extra flavor kick. It's a dumb name for a recipe, but that's what my kids always called it!


Directions

In a non-stick skillet, add all ingredients except cheese. Stir. Bring to a boil, then reduce heat. Cover, simmer on low heat 20-30 minutes until rice is tender. Stir often. Remove from heat. Sprinkle with shredded cheese.
