Soup - Hearty Chicken and Wild Rice

Introduction

Modified from Camilla Saulsbury's 'Enlightened Soups' - I reduced the amount fo rice, eliminated garbanzo beans and added chicken breast for more protein. This soup is very hearty and high in nutrients with spinach and mushrooms. Ingredients

    1 Tbs Extra Virgin Olive Oil
    1 medium sweet onion, chopped
    2 cloves garlic, pressed or finely chopped
    1 small bell pepper, diced
    16 oz sliced mushrooms
    6 cups water or stock
    14 oz boneless, skinless chicken breast, cut into 1 inch strips
    3/4 cup (dry) wild rice blend, about 2 cups cooked, cook according to package directions
    10 oz baby spinach

Tips

Sprinkle with Parmesan Cheese if desired.


Directions

While your rice is cooking, heat oil in a non-stick dutch oven over medium-high heat. Add onion, garlic and peppers. Cook and stir for 5 minutes adding salt to taste. Add mushrooms. Cook and stir for an additional 5 minutes.

Add broth and bring to a boil. Flavor with your favorite spices, rosemary, turmeric, ginger, etc. Add chicken breast to liquid to poach. Reduce heat and simmer for 10 minutes or until chicken is done. Remove chicken pieces, shred them and then return them to the pot.

Add cooked rice. Return to a boil, then reduce to simmer, covered for 5 minutes.

Add spinach and heat for 1 - 2 minutes until wilted.

Serve warm.

Serving Size: Makes 10 heaping one cup servings
