Loaded Potato Soup

Ingredients

    1 lb thick sliced bacon
    1 c. chopped onion
    1 clove chopped garlic
    6 c. chicken broth (add water if needed)
    .5 c salted butter
    1 tbsp dried chopped rosemary (to taste)
    2 tbsp oregano (to taste)
    2 tbsp salt (to taste)
    1 tsp ground pepper (to taste)
    1 c. low fat cream cheese
    1 c. fat free sour cream

Directions

Fry bacon in large dutch oven. Saute onions and garlic in the bacon grease. When that has finished, add diced potatoes, chicken broth, and spices. Cook on medium heat for about 30 minutes. Add butter, cream cheese, and sour cream. Allow to cook another 10-15 minutes.
