2 Tbsp canola oil
2 Tbsp whole wheat flour
.25 cups sweet peppers
6 oz milk
Salt and pepper, seasonings to taste
Peas can be added, or any leftover vegetables, to stretch the number of servings.
Add peppers, cooking briefly. Add chopped eggs.
Serve on toast.
