brocolli soup

Ingredients

    1Tbsp butter
    2 cloves garlic, chopped
    2 medium onions, chopped
    2 peeled potatoes, chopped
    2 c vegetable stock
    1 tsp salt
    1tsp pepper
    3 c chopped brocolli
    1 1/2 c skim milk

Directions

Melt butter in heavy saucepan.
Add onions and potatoes and cook on low 5 min.
Add stock, salt, pepper.
Simmer for 15 min.
Add brocolli- cook 5 - 10 min till just tender.
Blend in batches.
Return to pan.
Add milk and heat till hot.
