Hamburger Soup

Introduction

A yummy soup! A yummy soup!
Number of Servings: 16

Ingredients

    1.5 lb ground beef
    1 medium onion, chopped
    6 cups water
    8 cups beef broth
    1 can tomato soup
    6 chopped carrots, chopped
    8 stalks celery, chopped
    3 bay leaf
    parsley - around a quarter cup
    a few tbls of thyme
    2 cups rice
    8 small potatoes
    green pepper
    Diced tomatoes (canned) 56 oz

    (add any other veggie you like)

Tips

I usually add a lot more water and throw in whatever other veggies, tomato products, etc I find in the fridge. Barley instead of rice is also really yummy. I'm sure other grains might work too. This freezes well, you can make batches and store it. It is also great in a crockpot (if you have one big enough). I often make a double batch and then divide it into four meals - it barely fits in a crock pot then. :-)


Directions

Brown ground beef and chopped onion together. Add all ingredients, boil for about 2 hours.

Serving Size: makes 16 servings
