Corn & Couscous Salad

Introduction

Number of Servings: 15

Ingredients

    12 Cloves Garlic
    2 Cans Corn
    2 TB Butter
    1 Medium Onion
    2 Red Peppers
    4 c Chicken Stock
    4.5 c Couscous
    Cilantro, as desired
    Green onions, as desired
    Salt
    Pepper

Tips

This makes a HUGE batch. Great for a party, but can easily be cut in half for a family, considering leftovers.


Directions

Wrap peeled garlic cloves in foil and bake for 20 minutes at 400 F. In large pan, melt butter. Add onions and cook til soft. Add red peppers, cooking about 2 minutes. Finely chop garlic. Add to onions and peppers. Pour in chicken stock and bring to a boil. Add couscous and remove from stove. Fluff with a fork after 5 minutes. Add cilantro, green onions, salt and pepper as desired.
