4 Ripe Bananas, mashed
1/3 cup (generous) Applesauce (pureed prune 1 baby food jar - could be used too)
½ cup Sugar
1 Egg, beaten
1 Tbsp. Vanilla (I like a lot of vanilla)
1 tsp. Baking Soda
1 ½ cups Bread Blend Multigrain Flour (Robin Hood)
2 Tbsp. Chia Seeds (probably could use Flax or whatever your preference is)
Optional Chopped nuts, chocolate chips etc
You can reduce the sugar to 1/4 cup easily enough and even use all Whole Wheat Flour. I have not tried it yet with some combination of Almond or Coconut meal to try and get it Paleo friendly...
With a wooden spoon, mix applesauce into the mashed bananas in a large mixing bowl. Mix in sugar, egg, and vanilla.
Sprinkle baking soda and salt over mixture and mix in.
Add the flour and chia seeds last, mix. Add, and mix in, optional ingredients if desired.
Pour into a greased 4x8 inch loaf pan.
Bake for 50mins 1 hour (depends on how moist the banana bread is and personal preference).
Cool 5 minutes and then remove from pan to a cooling rack.
Enjoy!! (even better the next day freezes well)
