Oven roasted veggies side dish

Introduction

Inspired by walking through the produce department. Wanted to mix up the colors for something to go with a roast. Inspired by walking through the produce department. Wanted to mix up the colors for something to go with a roast.
Number of Servings: 12

Ingredients

    1 1/2 cups carrots, peeled and chopped
    1 1/2 cups celery, chopped
    1 1/2 cups onion, chopped
    5 1/2 cups butternut squash, peeled and chopped
    2 1/2 cups fresh Brussel sprouts
    3 cups beets, peeled and chopped
    4 cups yam, peeled and chopped
    4 cups sweet potato, peeled and chopped
    3 cups russet potato, peeled and chopped
    2 tbs olive oil
    1 tsp salt
    season to taste

Directions

Wash, peel, and chop all vegetables. Toss with oil and seasoning. Bake at 350 degree about 45 minutes or until done to personal liking.
